Well-balanced, protein rich, veggie meals
Recipes we have now cooked enough to have happily landed on a homemade dish that takes less than an hour to prep and cook. They all provide us with the variety we need, and are a source of protein:
- The list is split into breakfasts (i.e. smaller meals), and then by cuisine inspiration. This is because I don't really follow the traditional Breakfast / Lunch / Dinner type meal styles so it's easier for me to select weekly choices from a list like this 😊
Also, none of the photos below or via the link are edited or manipulated - they just are images of exactly what it looks like 1 sec before I eat it.
Oh and, all these meals are adapted using recipes from our parents or on Aunty Google - I've tried to include links where I can but generally I've adapted each dish to our tastes with practice.
Breakfasts: - Avo and Cottage Cheese on wholewheat toast
- Almond butter / Peanut butter on wholewheat toast topped with banana and grilled halloumi
- Grilled halloumi (on it's own, if you're like me and can't eat much in the morning)
- Greek yoghurt, granola and fruit
- Overnight oats with chia and/or flax and nut butter, topped with apple and cinnamon
Mexican: - Fajita Wraps with "chicken" pieces, "pulled BBQ jackfruit" or Vivera "kebab" pieces
- Lightly salted tortilla with refried beans / mixed beans topped with "vivera kebab" pieces
- Quesidillas with refried beans or "mince"
- Tacos with "mince"
- Chilli non carne with mixed beans
Indian: - Red split daal and mixed veg brown rice
- Green mung beans (mugh) and kadhi (Bhinda or plain kadhi) Green Moong Dal / Green Lentils - Instant Pot & Stovetop - Piping Pot Curry
- Palak Tofu, Palak Paneer or Palak Aubergine with Jeera rice
- Bhindha shak / green beans shak + Rajmo (kidney beans and sweetcorn)
- Bombay sandwich with cheese, with a side of baked halloumi or tofu
- Spinach Rotli / Sweet potato rotli with any shak listed
- Indo-chinese style chilli paneer with mixed peppers, sliced green beans, onions and other veg
- Pau Bhaji with a ratio of 1 sweet potato: 0.5 white potato and ghee not butter
- Khichri (green whole mung beans, or yellow split mung beans, or red lentils) - with mixed veg, masala, or plain for cleansing (adapted from Vegan Richa's recipe in her book, but 1 part lentils:0.5 part rice)
- Red lentil, soya beans and mixed veg tomato soup
- Spaghetti mince, aka Veggie Keema (from the Khatri recipe book) - ok we have this with spaghetti so it could also be under Italian I guess...
- Pudhla (chickpea flour pancakes with mixed veg) - typically had at breakfast but a bit heavy for me in the morning
- Indo-chinese mixed veg, maggi noodles and tofu gyoza soup with peas or soya beans and Tofu
- Channa bateta (kenyan style) 20-Minute Channa Bateta (Kenyan Chickpeas and Potatoes in Coconut Broth) - Sanjana.Feasts (sanjanafeasts.co.uk)
Italian: - Aubergine pizza topped with low fat mozzarella and "pepperoni"
- Tofu and garlic pasta bake / Arrabiata
- Aubergine parmesan with mince or topped with mozzarella (adapted from The Chutney Life's reel on Instagram)
- Veg packed lasagne with mince (open pan-cooked or traditionally baked)
- Baked feta veggie pasta
- Cold Pasta salad made with Greek Yoghurt
SE Asian Inspired: - Vietnamese Pho with Tofu and Gyoza (added extra to Vegetarian Pho Recipe (Vietnamese Noodle Soup) - Cookie and Kate)
- Homemade Tofu and Mushroom Gyoza + Salt & Pepper Tofu (takes longer than 1hour)
- Thai green curry with either Tofu or "Chicken" pieces
- Stir fry noodles (black bean or hoisin), with baked Tofu, Tempeh or "chicken" pieces and protein noodles (e.g. Bare Naked Noodles)
British: - Cottage pie with "Mince" Vegetarian Cottage Pie Recipe | Meat Free | Quorn
- Mixed Bean soup (aka "7 deadly beans" or Vadu)
- Jacket potato with mixed beans and cheese / cottage cheese
- Quorn Hot dogs
- Tofu Burgers and Sweet potato chips / Beyond Burgers and Potato Wedges
- English breakfast: Yorkshires, "bacon", maple syrup sprouts and carrots, hashbrown waffles, mixed beans, avo, fried mushrooms and onions, Linda McCartney sausages
- Baked Spiced Veg and Halloumi
- 1 pot mixed beans with veg sausage, spinach and cottage cheese
- Cheese and plant-chef coleslaw (vg) sandwich with quorn slices
- Stuffed peppers with quinoa and mince / stuffed mushrooms with creamy mince
Mediterranean: - Falafel wrap / Falafel bowl
- "Charcoal" paneer wrap / paneer bowl
- Tofu Shakshuka Vegan Shakshuka (Tofu in Purgatory) - A Virtual Vegan
Desserts: - Blended Vegan protein power, nut butter, sweet potato, cocoa, maple syrup oats brownie topped with cocoa and coconut sugar to form the crisp top (I also top mine with melted 90% dark chocolate and peanut butter because I have a super sweet tooth)
- Banana and peanut butter brownie
- Medjool Dates
- Blended Medjool Dates, Nuts, protein powder and cocoa energy balls / energy bar
- Fruit protein shakes / Fruit
- Chocolate pots
- Chocolate flavoured overnight oats
