Well-balanced, protein rich, veggie meals

Recipes we have now cooked enough to have happily landed on a homemade dish that takes less than an hour to prep and cook. They all provide us with the variety we need, and are a source of protein: The list is split into breakfasts (i.e. smaller meals), and then by cuisine inspiration. This is because I don't really follow the traditional Breakfast / Lunch / Dinner type meal styles so it's easier for me to select weekly choices from a list like this 😊 Also, none of the photos below or via the link are edited or manipulated - they just are images of exactly what it looks like 1 sec before I eat it. Hair care after months of hair loss

1 week into in our 2 week trip in Vietnam had me watching my hair fall out in clumps every time I washed or brushed it, I initially thought it was natural hair-fall , but soon I started to get scared it was something a lot more serious. By the time we got to Dalat I was completely hysterical, and in tears I asked Min if he would still love me if I went completely bald... Everyone loves a drama queen 😉 Anyway, I think my hair fall had started months earlier, and my guess is that it was caused by: Natural seasonal hair fall cycle, coinciding with; Not taking any vitamins since we left London, Hard water in SE Asia, and My body catching up after having been constantly on the go for a year or so It’s been over a year and a half now, and thankfully all is back to normal (I think) Ok, I don’t have nearly as much hair as I used to have, but my length and shine is back, and I don’t have clumps of hair falling out anymore (hopefully I’m not jinxing it!) 15 invaluable days in Vietnam 💖

Two weeks in Vietnam flew by way too quickly. I would have stayed and done so much more! I loved this country so much, it made both of our equal top four from the trip (it’s a cop out because neither of us could choose a favourite place when we were asked ha). We did Vietnam north to south:  Hanoi - 2 night Halong bay - 1 night Phong Nha – 3 nights Dalat – 3 nights Hoi An - 2 nights Ho Chi Minh City / Saigon - 3 nights We travelled between these by long distance night-buses that are accessible same-day from most areas. 5 days in Laos 🌸

Laos was the most undercover country I experienced on this trip. I had no expectations and had the best time. I initially didn't want to leave Luang Prabang because of the serenity and beauty, but then we got to Vang Vieng where one long road becomes a big spontaneous-hostel-bar-crawl every night, is full of backpackers from around the world, and everyone feels like family overnight, and decided I wanted to stay there longer instead! Crossing from Thailand into Laos by bus (not boat)!

I am so grateful to others who had travelled through the same areas before us who had written online about their experiences and recommendations for travel methods and things to do, At the time, most people had travelled from Thailand to Laos by the slow boat (or plane, if they could afford it). Nearly all of them write about sickness, hunger and / or gun crime related experiences that came with the slow boat - I was not interested in that, We decided to take the bus across the Thai border over the 4th Thai-Lao friendship bridge; it took a few hours longer than flying, but a few hours less than the boat, Overall, it was a simple way to get into Laos and I'm really glad we did it this way! North Thailand: Bangkok, Chiang Mai & Chiang Khong

I am a city girl, I love people watching, culture exploring, and hustle and bustle - and I loved Bangkok! I know it's not for everyone, but it was for me. I didn't want to leave...  But then we got to Chiang Mai. By far my favourite and most fun place EVER. A massive thanks to Joe at Joe's House and everyone we met who became friends like family (with lots of Sang Som) overnight - and to the waffle lady in the weekend market - I miss you every single day.
